Wines Elaboration

Vinification follows the same approach as viticulture, it is its extension, so by definition, and since the 2019 vintage, it is essentially parcel-based, which required the purchase of many small tanks.

The parcel of land in the spotlight

This allows us to individualize the work, to better understand the profile and functioning of each crop unit, and to obtain more complexity and precision in the wines. It is also done with a minimum of inputs, and in particular a minimum of sulphites, which are generally not used at harvest or during vinification, but only during maturation and bottling, at minimal doses.

Control of inputs

In order to keep the wines perfectly clean and pure, this requires a lot of attention, a night harvest for a large part of the grapes, a perfect control of the temperature, and the use of neutral gases (CO2, Nitrogen) at different stages.
