Grape variety : Chardonnay 100%

Vinification : For this wine, we harvest the grape from our oldest Chardonnay vines when it has reached a fine ripeness in mid-September. The grapes are destemmed, but not crushed, and then pressed.

The grape juice obtained is decanted at low temperature before being barrelled. The alcoholic and malolactic fermentation processes take place in oak casks. The wine is aged in the barrel while the lees are stirred (resuspended) every fifteen days to enrich the wine with fine aromas.

The Chardonnay Exception is then clarified, filtered and bottled.
