L’Inédit Rosé

I.G.P Méditerranée Carl et Sophie Mestdagh - Owner Harvesters

Grape varieties :  Grenache 49%, Carignan 25%, Cabernet Sauvignon 21%, Marselan 3%, Syrah 2%

Terroir : Clay-limestone, pebbles.

Vinification : For this cuvée entirely harvested and vinified by Les Masques, the grapes come equally from the Masques’ farm on Le Cengle and from our technical director’s family farm in the neighboring commune of Pourrières, in the Arc Valley.

Harvesting at night, or early in the morning. Separation of the juice from the skips, which will be blended with the press juice. Generalized destemming, crushing according to the grape variety and the vintage. Passage of the grapes in an exchanger to bring it to the coolest temperature possible.

The cellar has two small presses, allowing a work adapted to each parcel. The carbon dioxide inerting starts when the juices flow, and will be maintained throughout the process. Thus, our rosés do not generally have any sulfites added until the end of the fermentation process.

We implement a cold stabulation process which consists in lowering the temperature of the grape juice around 0°C and in suspending the lees daily for two weeks, in order to reveal the aromatic potential of the musts.

The juices are then racked and the temperatures regulated between 15 and 17°C for the alcoholic fermentation, according to a logic of small batches allowing the development of our parcels and a maximum of complexity.

The wines were blended and filtered in December, for bottling from January to June.

The wine is corked in Diam 3, guaranteeing no cork taint and minimal permeability. Combined with the beautiful acidity of our terroir, and the residual carbonic gas voluntarily left at bottling, this guarantees maximum aromatic freshness with a minimal dosage of sulfites.

    Bright and clear pink.

    Complex and open, on strawberry, English candy, peach and citron.

    Supple attack ; balance between roundness and freshness, flavors of red fruits, melon and citrus fruits, all in fluidity.

    10° à 12°C

WINE PAIRING

Casual aperitif, picnic, swimming pool... It is the thirsty rosé for all moments. Try it with simply grilled fish, an aioli, zucchini flower fritters, it will surprise you.

To be drunk within two years according to the vintage.
