Grape variety: Syrah 90% Viognier 10%
Vinification: The Syrahdictive is the result of a plot selection. The bunches are destemmed without being crushed before being vatted. Alcoholic fermentation starts naturally after a few days thanks to the estate’s indigenous yeasts. Tasted throughout the process, the wine is more or less worked (pumping over, pigeage). Depending on the level of concentration of the must and the vintage.
At the end of the alcoholic fermentation, the grapes are devatted pressed and matured for a year and a half in barrels in our cellars, before blending and resting for a few more months in vats. Very light filtration just before bottling, which took place on August 29, 2018 for this vintage. Nearly two years of conservation in bottle in our cellars then preceded the dressing and the sale of this Syrahdictive 2016.
Deep purple with carmine reflections.
Aromas of cherries in brandy and sweet spices, with a floral development on hawthorn and peony.
Silky from the attack, with red fruit and white pepper flavors, a lot of finesse, a little smoky touch and a fresh finish, on the cherry pit.

This Syrahdictive which “pinote” is already appreciated quite simply on a rib of beef grilled with vine shoots, Provençal andouillettes, quail or duck with olives, but it will also reveal itself in winter on a beef bourguignon, game birds or eggs in meurette with black truffle.
Already irresistible, this cuvée will improve even more over 3 to 6 years depending on the cellar and the taste of each one.
