Vinification : The red wines of the Domaine are vinified in parcels.
In 2020 the harvest of the parcels concerned was spread out between September 17 and October 5.
The major part of the vintage was destemmed, crushed, vatted without sulfite and cold-macerated for about ten days.
During the vinification, we only proceeded to light pumping over to orient the Essentielle on a maximum of suppleness. For the same reason, the devatting is done shortly after the end of fermentation. The press juices were separated and aged separately with other more concentrated Syrah presses, then partially incorporated into the final blend.
The maturation of the final blend was carried out exclusively in stainless steel tanks.
Several rackings were carried out before bottling, which took place in three stages between spring and summer 2021.
Carmine red with purplish reflections.
Dominant aromas of pepper and pink berries, notes of cherry and peony, with a nuance of bay.
Dynamic attack on berry flavors, development on blackberry, pepper and mint, soft tannins, fresh finish.

This fresh red wine, relatively light but not without character, can accompany a wide variety of dishes. It will be particularly at ease with grilled meats, eggplant parmesan... or a raclette!
We advise you to taste this wine in its youth, nevertheless you can keep it 2 to 3 years.
